Reading this reminds me of when I was in Beijing and saw this amazing scallion pancake crepe type breakfast being made. My friend and I watched with such anticipation as it was prepared for a customer and passed through a window in a plastic bag. We pointed to it and smiled and nodded our intention to order it and happily feasted on this breakfast. Thanks for triggering this delicious memory.

Those were jianbing! Those are my absolute favorite. I have a “cheater’s” version of that in my cookbook—I think the method I came up with tastes pretty authentic in many ways.
