OK. I totally appreciate this because I agree, it's always too much meat. 1/4 pound is absolutely enough. What a perfect upgrade to a sandwich that usually makes my tummy hurt (but is also special) haha.
Also, just need to share what a monster I am and my Jewish deli sandwich order is corned beef on rye with JUST lettuce, tomato, red onion, pickle (and no sauces at all). I would fully quesadilla-fy that but without mayo because mayo scares me. But adding the horseradish, kraut, ketchup, swiss seems awesome. Now I'm blabbing. But thank you for the inspo. This is fun.
That Russian dressing plus sauerkraut combo always hits. I bet this would also work with good smoked turkey or mushrooms instead of pastrami (we are pretty low-beef these days.)
